Passion For The Product

To finish off the week on our usual food theme, I’ll report on something I heard this week on one of the many podcasts to which I subscribe.  While WTF is generally about comedy, recently the host interviewed Anthony Bourdain, noted author, TV personality and, as he would tell you, former glorified line cook.  Mark Maron, the host, was discussing the similarities between comics and cooks and the discussion covered training and paying one’s dues.  Mr. Bourdain then made a comment that stuck with me and I think covers broader businesses than funny and food. Dirty Hands

Our food theme today is getting one’s hands dirty.  I thought about this last night as I was watching “Chef Hunter” on The Food Network, a show I really like.  Basically, it’s a job interview for two chefs who want to run a restaurant.  Each chef is given the run of the kitchen for a service and the management evaluates how well they manage the kitchen, the menu, and their food costs.  The chefs also create some special items for the day and the caliber of their cooking is part of the equation.

In last evening’s show, which took place in Hawaii, one chef  generated some interesting comments by the other members of the staff.  The one that triggered my thought may be unfamiliar to you, as it was to me, but it points out an interesting business lesson:  the chef had a high maka maka attitude. Butchering The Chance

What better food topic than the premiere of Top Chef for our Foodie Friday Fun?  The power came back on in time for the show the other night (yay!) and in addition to some intriguing food there was a great business point made right off the bat.  The competition began with far more than the usual 16 cooks and many of those who came to Texas thinking they were on the show were, in fact, fighting for one of those 16 slots.  One competitor in particular stood out for all the wrong reasons, and it’s he who provided the business point I’d like to make today.
