Reaping What We Sow

Finally Friday, and that means something food-related.  This week, you might have passed over the article on NYC’s Monkey Bar in the NY Times.  You can read it if you click through here.  In any event, it provided a pretty good business lesson for today’s screed.

This joint has been around for 75 years.  Luminaries such as Tennessee Williams, Joe DiMaggio, Helen Hayes and others helped to build its reputation.  It was taken over in 2009 by an ownership group that was focused on glitz and exclusivity and were quite successful taking that route.  For a time.  Now, not so much. Wine Down

Well, the power finally came back on late yesterday after five days in the dark.  It was an interesting departure from broadband internet access, cable TV, and hot water.  More on that next week.

For now, as promised yesterday, here is the second of our business tidbits the personal energy crisis caused me think of.  Since it involves a restaurant here in town, I thought it appropriate for our Foodie Friday Fun post. We were having to eat out since cooking on the stove (the gas still works) is hard in the dark and without a range hood the place is kind of smoky and smelly (in a good way, mind you!).  In the process, I learned a little something. Open Kitchens

Since it’s Friday, let’s discuss food or, actually, food prep. Say you’re opening a restaurant. Would you have an open or a closed kitchen? An open kitchen is one where the diners can see in. Sometimes it’s enclosed by glass; often it’s just open. A closed kitchen is..well..closed. Personally, I don’t think it’s really a choice but that’s based on other businesses so let’s discuss.
