We were having dinner, my friends and I, when one of them came out with a rather profound statement I’d like to share with you.  Now, you don’t know my friend Spooge but trust me: he’s not given to profound statements, even after some very good wine.  However, the situation damn near forced him to dig deeply, and, as you’ll see, he did.

We were chatting about a fellow he knew who had behaved badly.  This guy had used some long-term personal relationships to act on behalf of people who were not really on the up and up.  His acquaintance had done so because he was doing what he could to ingratiate himself with these low-lifes with an eye toward employment.  In the process of doing so, he alienated a couple of guys – my friends – who saw right through him.  Intrigued? The Searing Myth

Today’s Foodie Friday post is about one of the big cooking myths that I hear repeated by cooks all the time.  In fact, you might even catch the odd TV chef repeating it.  That myth is the one about why you brown off a piece of meat – roasts in particular – before you lower the heat (or move it to a cooler part of the grill).  I’ll bet you’re mentally answering that question now and it may be with “because that’s how you seal in the juices so the meat doesn’t dry out.”  There’s the myth and also today’s business thought. Weakened Warrior

Most of what shows up in our snail mail box is junk, bills, or magazines. However, once in a while something shows up which just compels me to share it. That happened the other day with the arrival of a “Rush Priority Express Letter.” It had to be important since it commanded the USPS to “Rush To Addressee” because it’s “Extremely Important.” Of course the colors of this missive are red, white and blue and there’s a picture of what appears to be an eagle (ornithology not a specialty here).
