The Searing Myth

Today’s Foodie Friday post is about one of the big cooking myths that I hear repeated by cooks all the time.  In fact, you might even catch the odd TV chef repeating it.  That myth is the one about why you brown off a piece of meat – roasts in particular – before you lower the heat (or move it to a cooler part of the grill).  I’ll bet you’re mentally answering that question now and it may be with “because that’s how you seal in the juices so the meat doesn’t dry out.”  There’s the myth and also today’s business thought. Living To Eat

I was riding home on the train last night and there was a guy chowing down.  “Eating” would be a gross understatement – he was mechanically stuffing his face for nearly the entire hour of the train ride.  Since it’s Friday, he seemed right on topic for our weekly food theme.

If you walk around at lunch time you might spot a number of people behaving in a similar manner.  They’re focused on something other than their food.  Eating is something they do because at some point we all have to.  I get the sense that if they could take a pill and be done with the eating thing they would.  Then there are the folks that don’t really seem to be enjoying their food but just keep eating it.  When they’re done with one thing – or whatever is on their plate – they’ll move on to the next thing – or to your plate!  Kind of food sharks – they must keep eating even if they’re not hungry.

The Label

I know you were hoping I’d write about the food at the Royal Wedding this morning but since my invitation got lost in the mail I have no basis upon which to comment. Not that I’ve ever let that stand in my way before. I do have experience with food shopping, however, and I read a lot of labels as I do so. Those labels – and the packages on which they reside – are today’s food thought and of course it ties into business – and just maybe your health – as well. Continue reading
