Behold The Radish!

This week, as you might have guessed from the headline, our Foodie Friday Fun topic is the radish.  More specifically, the business lessons we can learn from using radishes in cooking.  If you’re like me, your exposure to radishes has been mostly through salads, at least for the most common variety, the red radish.  You might also have had daikon radish in Japanese food, and if you’re a fan of French eating you might even have smeared butter on a breakfast radish and eaten it to start your day.

If I asked you to describe the taste and texture of the radish, you’d probably say it was crisp and firm, with a sharp (it is a member of the horseradish family, after all) taste.  And that’s where the business point begins. Continue reading

Dirty Hands

Our food theme today is getting one’s hands dirty.  I thought about this last night as I was watching “Chef Hunter” on The Food Network, a show I really like.  Basically, it’s a job interview for two chefs who want to run a restaurant.  Each chef is given the run of the kitchen for a service and the management evaluates how well they manage the kitchen, the menu, and their food costs.  The chefs also create some special items for the day and the caliber of their cooking is part of the equation.

In last evening’s show, which took place in Hawaii, one chef  generated some interesting comments by the other members of the staff.  The one that triggered my thought may be unfamiliar to you, as it was to me, but it points out an interesting business lesson:  the chef had a high maka maka attitude. Moby Dick

I was going to write about analytics this morning but I think we’ll save that for later this week (I can hear you all marking your calendars…). Instead, I see that today is the anniversary of the US release of Moby Dick 160 years ago. I’m sure some of you think it’s been making students miserable ever since.
