Cooking For Customers

This Foodie Friday I want to write about something I picked up during Gordon Ramsay‘s AMA session on Reddit this week.  You can read the entire transcript here and for those of you who only think of Chef Ramsay as the screaming maniac  on Hell’s Kitchen it’s worth the read.  One of the questions concerned his views of the Michelin Guide, the oldest international hotel and restaurant reference guide, which awards Michelin stars for excellence to a select few establishments.  Chef Ramsay’s restaurants have won many Michelin stars and his restaurant, Restaurant Gordon Ramsay, gained its third Michelin star in 2001, making Ramsay the first Scot to achieve that feat.

These stars can make or break a business, and unlike reviews on Yelp or elsewhere they are given by a carefully trained team of reviewers after multiple visits.  Given his track record on winning them, one might think that Ramsay had figured out how the system works and cooks to win the stars that propel his business.  Not so much:

So the stars are awarded to the restaurant. And sometimes the chefs think the stars belong to the chefs, but they belong to the restaurant. The service is just as important. Michelin’s had a hard time in America, because it was late coming to the table. But if there’s one thing I respect, it’s consistency. They manage to identify consistently, and it’s all there for the customer. So when people ask me “What do you think of Michelin?” I don’t cook for the guide, I cook for customers.

That is good guidance whether your business involves a kitchen or not. First, there is a recognition that his business – and yours! – are taken as a whole and reflect the strengths and weaknesses of the team.  The front of house service is just as important as the food.  Your customer service is just as important as the quality of your product or professional service.  Second, his focus is not on catering to the reviewers.  It is squarely where it belongs – on his customers.

Each of us can ask if were cooking for reviewers – our bosses, our board, our stockholders – rather than our customers.  We need to think of the business as a team effort and not as some reflection of our own worth.  The statement, above, is a great reminder of that to me.  You?

The Name On The Door

Today’s Foodie Friday Fun is about the business side of food, a restaurant, so if you’re here today for cooking tips I apologize. You probably know chef Gordon Ramsay from his incessant TV appearances and, if so, you’re aware of his obsession with quality and high standards. What’s happened here in New York to his Gordon Ramsay at The London restaurant is a great lesson for any business.

The restaurant opened in 2006 and soon thereafter won two Michelin stars. For any of you non-foodies, suffice it to say that there are currently only 14 places in NY that are two or three stars – they’re hard to win.  Unlike the Zagat ratings, these are all done by professional inspectors who are totally anonymous.  That was 2008.  In 2009 Ramsay sold the restaurant to the hotel (he needed the money – that’s another story) and licensed his name as part of the deal.

Fast forward.  The new guide came out and both stars are gone.  In a year (he had the two stars last year).  That’s pretty unheard of and shows a significant decline in quality and standards.  The chef’s response (via Eater)?

“Gordon Ramsay is not involved in the day-to-day running of the restaurants or kitchens, as this is a licensing agreement, but is in communication regarding updates and changes at the restaurant.”

In other words, although my name is on the door I’m not involved.   We heard something similar out of Donald Trump when the Trump casinos went bankrupt (how the heck do you lose money running a casino?!?!):

“Other than the fact that it has my name on it – which I’m not thrilled about – I have nothing to do with the company.”

I’ve done licensing agreements and one thing that is always a part of them are the product standards.  Since it’s your name, you always have the right to examine the product and if it’s not up to your standards, to demand that it’s fixed or not sold.  You might shrug and say well, that’s the restaurant business but it’s your business as well.  If the quality of whatever product or service you’re providing – even through a third party – isn’t up to snuff, it’s your name and reputation, not the third party’s.  Given that many of Ramsay’s other places – where he is more hands-on apparently – have held on to their stars – his place in London has three! – it’s clearly not that the chef has lost his touch.  It that he was out of touch with the New York place.

If your name is on the product, you need to be involved and maintain the standards that warranted your name on it in the first place.  When people knock on your door, they see you, not the landlord, not the builder, not the cleaning crew, not even the people who actually do the work.  You.  I’m all for meeting the customer expectations that my name engenders.  Aren’t we all?

Another Season of Nightmares

Finally Friday, and given yesterday’s exacta ticket of St. Patrick’s Day and the beginning of the NCAA basketball tournament, I’m sure there are more than a few hangovers out there. I’ll try not to use many big words, OK?
Foodie Fridays now feature one of my favorite shows, Kitchen Nightmares. If you’ve never watched it, I think it’s worth checking out, especially since it’s really a business show. The premise is that Chef Gordon Ramsey steps in to save failing restaurants, and in most cases the sub-par food is only a fraction of the problem. Kind of like your office, right? Continue reading
