Something a little different here on Foodie Friday.

We’re going to start with a movie which leads us to food which of course leads us to business. Kind of a prix fixe, three-course menu!  The movie even has the name of a pastry in its title: Napoleon Dynamite. I love this film, and in particular I love the sequence in which Napoleon is bemoaning his lack of talent:

Napoleon Dynamite: I don’t even have any good skills.
Pedro: What do you mean?
Napoleon Dynamite: You know, like nunchuku skills, bow hunting skills, computer hacking skills… Girls only want boyfriends who have great skills.

Funny thing is, kitchens only want them as well, Napoleon, and it’s becoming rarer for those skills to make appearances as the nature of our food chain changes.  Outside of the top restaurants in any given city (and maybe not even there), many basic kitchen skills have…well…disappeared.  No, I’m not talking about the ability to chiffonade or brunoise with eye-blinding speed.  Those skills won’t ever be lost.  It’s more the ability to do things such as recognizing various species of fish, knowing how to tell they are fresh, knowing how to skin and fillet them.  Today, cooks order what they want from suppliers and they often come broken down and portioned.

The same can be said about meat.  Cooks know cryovac, not  the different cuts of meat, much less how they are butchered and how they need to be cooked.  Even home cooks can get any ingredient and there are no “seasons” per se, but professionals should understand native ingredients, their seasons and  how they are grown.  All of the above are skills – basic skills in my book – if you want to run a professional kitchen.  Dealing with fresh, unprocessed ingredients recognizing quality, understanding what works with respect to taste and flavor are the underpinnings of the kitchen. Dealing fairly and responsibly with suppliers and  running a business are the underpinning of the enterprise.

It’s not much different in the broader business world.  Any manager will tell you that recruitment and retention of skilled staff is a major challenge. The pressure to retain promising people sometimes means that they’re being promoted too quickly, which means they don’t have the experience to deal with certain critical situations.  Younger staff learn to rely on spell checks and miss contextual spelling errors.  They don’t learn the differences between online writing and formal business writing.  They have difficulty listening in a world that encourages selfies.

Skills will never go out of style, even in a world where the ingredients come pre-portioned.  Those who succeed will be the ones that know how to break down a primal cut – learning grammar and speaking skills in the office sense.  That’s my take.  Yours?

Cover Me

TunesDay! Today I want to write about the cover tune, one of the most overlooked forms of music. Way back when in the ancient days before the Beatles and Buddy Holly, musical artists rarely wrote their own music. Instead, they either discovered songs on their own or, more often, worked with A&R people and managers at their label to find music that was optimal for their voices. Arrangers would figure out the musical backing and that arrangement was often more important than the vocal. Think of the sound of Frank Sinatra singing a Quincy Jones  arrangement versus one by Nelson Riddle.  Same voice, very different sound.

Today most artists write and perform their own music rather than “standards” or songs produced by writing houses such as those found in The Brill Building.  Covering another artist‘s work is the exception, it seems.  When done right, however, it can make that interpretation something unique and your own.  For example, this:

Which is the business point today.  I have clients who stress out from time to time about being original, and I agree that making something one’s own is really important in business.  After all, consumers expect us to be authentic and to speak in our own voices.  However, doing a brilliant cover version of someone else’s song in the business world can be a fantastic and successful strategy.  After all, Amazon wasn’t the first online commerce site nor was eBay the first online auction site.  Both interpreted the “song” they chose and did it better.  They became hits while the original artists faded away.

Rather than worrying about the “new” or the latest shiny object (or technology) out there, maybe we should focus our energies on rearranging what has proven to be appealing and covering it in a way that adds new meaning.  Maybe that’s another example of everything old (covering songs and rearranging them) being new again but if it is, I’m in.  You?

The Early Warning System Is Going Off

There’s always a scene in movies about some epic disaster during which an early warning system goes off.  A young scientist believes a comet will hit the Earth but the older scientists tell him he’s nuts.  A tsunami monitor goes off when there are calm seas and the woman watching it disregards the information.  You know the drill.  As the audience, we know that disaster is coming but those who have the information are blissfully unaware until disaster strikes.millennials-broadcast

I thought of that as I read a couple of articles the other day.  The first is from the good folks at Poynter who reported on some research the NY Times did.  Quite an eye-catching headline:

Thirty-four percent of millennials surveyed watch mostly online video or no broadcast television, new research from The New York Times says.

Now granted, the study was among 4,000 current users of online video so one could argue, like the woman watching the calm sea, that the sample is skewed.  The again, given the high percentage of young folks that are online video watchers, I’d listen.  After all, cord cutting is no longer dismissed as the rantings of some early adopter lunatics.  There are numbers that prove it’s for real, especially since we’re not talking about “cord-nevers” – young people who never had cable TV – just a broadband connection for streaming.  As one report had it:

While 3.2 million new U.S. households were set up in the last three years, the paid-TV industry only added 250,000 subscriptions in that same period.

Not so good.  And if that’s not a loud enough alarm, here comes the near-miss fireball from out of the sky that gets everyone’s attention, courtesy of our neighbors in the Great White North:

The Canadian government will soon require cable and satellite television providers to make it easier for customers to buy only the channels they want rather than pay for bundles, the country’s industry minister said on Sunday.

“We don’t think it’s right for Canadians to have to pay for bundled television channels that they don’t watch. We want to unbundle television channels and allow Canadians to pick and pay the specific television channels that they want”

Sound familiar?  It should, since it’s the same fight that’s been brewing here for several years and which intensifies each time your cable or satellite bill goes up.  Cable executive are rightly scared that their penetration into the household base will fall, making subscriber revenues drop and ad sales impossible.

Young people tuning out in droves.  The fundamental business model under attack.  Have we reached the end of the TV world?  Not yet.  But in my mind the early warning systems are howling.  What do you think?
